  • 2 carrots, chopped

  • 1 tsp dried thyme
  • 2 bay leaves
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Sauté your sausage: Heat a large pot over medium heat. Add sausage and cook until browned.
  2. Add aromatics: Toss in onions, carrots, and celery; cook until soft, about 5-7 minutes. Add garlic last.
  3. Mix in potatoes: Stir in diced potatoes and herbs, cooking for a couple of minutes.
  4. Pour in the broth: Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 15-20 minutes.
