- 4 medium potatoes (Yukon Gold or russets), diced
- 1 onion, chopped (yellow or sweet)
- 2 stalks celery, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 2 bay leaves
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Sauté your sausage: Heat a large pot over medium heat. Add sausage and cook until browned.
- Add aromatics: Toss in onions, carrots, and celery; cook until soft, about 5-7 minutes. Add garlic last.
- Mix in potatoes: Stir in diced potatoes and herbs, cooking for a couple of minutes.
- Pour in the broth: Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 15-20 minutes.
- Cream it up: Stir in heavy cream, season with salt and pepper. Heat through.
- Serve and enjoy: Garnish with fresh parsley or thyme before serving.
