- 1 lb Boneless chicken (breast or thighs)
- 8 oz Cream cheese
- 3 cloves Fresh garlic, minced
- 1 Onion, chopped
- 1 cup Mushrooms, sautéed
- 4 cups Chicken broth
- 1 cup Celery, chopped
- 1 cup Carrots, chopped
- 1 tsp Fresh thyme (or ½ tsp dried)
- 1 tbsp Fresh parsley (for garnish)
- Salt and pepper to taste
- Dash of paprika
Instructions
- Prepare the Ingredients: Chop vegetables and dice the chicken into bite-sized pieces. Sauté garlic and mushrooms.
- Combine Ingredients in the Slow Cooker: Place the chicken, sautéed mushrooms, chopped vegetables, and seasonings in the slow cooker. Pour in the chicken broth.
- Add the Cream Cheese: Cut cream cheese into cubes and spread on top.
- Cook: Set slow cooker to low for 6-8 hours or high for 3-4 hours.
- Finish: Stir the soup once done cooking and adjust seasonings.
- Serve: Ladle into bowls and garnish with fresh herbs.
