  • 1 cup sun-dried tomatoes (oil-packed)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve a cup of pasta water and drain the spaghetti.
  2. Sauté the minced garlic in a large skillet with olive oil over medium heat until fragrant, about 1 minute. Add the spinach and cook until wilted, about 2-3 minutes.
  3. Create the creamy sauce by lowering the heat, adding heavy cream, sun-dried tomatoes, salt, pepper, and nutmeg. Bring to a gentle simmer and adjust the thickness with reserved pasta water if necessary.
  4. Combine the cooked spaghetti with the sauce, folding gently to coat every strand.
  5. Finish with a sprinkle of grated Parmesan and serve immediately, optionally with extra cheese and crushed red pepper flakes.

Notes

For a lighter version, substitute heavy cream with half-and-half or a non-dairy cream. Zucchini noodles can be used for a low-carb alternative.
