- 8 oz spaghetti
- 1 cup sun-dried tomatoes (oil-packed)
- 4 cups fresh spinach
- 1 cup heavy cream
- 3 cloves garlic, minced
- 0.5 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Pinch of nutmeg
Instructions
- Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve a cup of pasta water and drain the spaghetti.
- Sauté the minced garlic in a large skillet with olive oil over medium heat until fragrant, about 1 minute. Add the spinach and cook until wilted, about 2-3 minutes.
- Create the creamy sauce by lowering the heat, adding heavy cream, sun-dried tomatoes, salt, pepper, and nutmeg. Bring to a gentle simmer and adjust the thickness with reserved pasta water if necessary.
- Combine the cooked spaghetti with the sauce, folding gently to coat every strand.
- Finish with a sprinkle of grated Parmesan and serve immediately, optionally with extra cheese and crushed red pepper flakes.
Notes
For a lighter version, substitute heavy cream with half-and-half or a non-dairy cream. Zucchini noodles can be used for a low-carb alternative.
