  • 8 oz Fresh Mushrooms (cremini or button)
  • 1 cup Heavy Cream
  • 1 cup Sharp Cheddar Cheese, grated
  • 1 cup Gruyère Cheese, grated
  • 3 cloves Garlic, minced
  • 2 tbsp Butter
  • 1 tsp Fresh Thyme (or dried)
  • Salt and Pepper, to taste
  • Optional: Breadcrumbs for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the Spaghetti Squash: Slice in half lengthwise, scoop out seeds, brush with olive oil, and season with salt and pepper. Place cut side down on a baking sheet and bake for 40-50 minutes.
  3. Sauté the Mushrooms: In a skillet, melt butter, add mushrooms and cook until golden brown, about 5-7 minutes. Add garlic and sauté for another minute.
  4. Make the Cream Sauce: Stir in heavy cream, bring to a simmer, and then mix in the cheeses until melted and creamy. Season with thyme, salt, and pepper.
  5. Combine: Flip the spaghetti squash, shred the flesh, and incorporate it into the creamy mushroom mixture.
  6. Transfer to a greased baking dish and optionally top with additional cheese and breadcrumbs.
  7. Bake for 20-25 minutes until bubbly and golden.
  8. Serve warm after cooling slightly.
