Ingredients

  • 2 lbs chicken (breast or thighs)
  • 4 cups fresh spinach
  • 1 can artichoke hearts, drained
  • 1 cup cottage cheese
  • 1/2 cup heavy cream or sour cream
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 tsp dried thyme
  • 1/4 tsp ground nutmeg
  • 1 cup cheese (Parmesan or mozzarella)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish.
  2. Add a drizzle of olive oil to a large skillet over medium heat. Sauté diced onion and minced garlic until fragrant, about 2-3 minutes.
  3. Stir in fresh spinach, cooking until wilted, about 2-4 minutes.
  4. Combine drained artichoke hearts with salt, pepper, and nutmeg.
  5. Fold in the cottage cheese and cream or sour cream. Stir to mix.
  6. Season chicken with salt and pepper, place in the baking dish, and pour the creamy mixture over it.
  7. Finish with a sprinkle of cheese on top.
  8. Bake for 30-35 minutes until the chicken is cooked through and cheese is bubbly.
  9. Let it rest a few minutes before serving.
