- 2 lbs chicken (breast or thighs)
- 4 cups fresh spinach
- 1 can artichoke hearts, drained
- 1 cup cottage cheese
- 1/2 cup heavy cream or sour cream
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tsp dried thyme
- 1/4 tsp ground nutmeg
- 1 cup cheese (Parmesan or mozzarella)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish.
- Add a drizzle of olive oil to a large skillet over medium heat. Sauté diced onion and minced garlic until fragrant, about 2-3 minutes.
- Stir in fresh spinach, cooking until wilted, about 2-4 minutes.
- Combine drained artichoke hearts with salt, pepper, and nutmeg.
- Fold in the cottage cheese and cream or sour cream. Stir to mix.
- Season chicken with salt and pepper, place in the baking dish, and pour the creamy mixture over it.
- Finish with a sprinkle of cheese on top.
- Bake for 30-35 minutes until the chicken is cooked through and cheese is bubbly.
- Let it rest a few minutes before serving.
