- 2 cups Fresh Mushrooms (cremini or button)
- 2 cups Fresh Spinach
- 1 cup Ricotta Cheese
- 1 cup Mozzarella Cheese
- 1/2 cup Parmesan Cheese
- 1 cup Heavy Cream
- 2 cups Whole Milk
- 4 tablespoons Butter
- 4 tablespoons Flour
- 2 cloves Garlic, minced
- 1 small Onion, chopped
- Salt and Pepper to taste
- Dash of Nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the vegetables: Heat olive oil in a skillet, add onions and garlic, then mushrooms, cooking until golden. Finish by adding spinach until wilted.
- Prepare the béchamel sauce: Melt butter, whisk in flour for a couple of minutes, then gradually add milk and cream, whisk until thickened.
- Layer the lasagna: In a baking dish, add a layer of béchamel, lasagna noodles, mushroom-spinach mixture, ricotta, and mozzarella. Repeat until finished with a top layer of béchamel, mozzarella, and Parmesan.
- Bake: Cover with foil and bake for 25 minutes, uncover to bake for another 15 minutes until bubbly and golden.
- Rest before slicing for 10-15 minutes to firm up.
Notes
Serve with a side salad dressed with lemon vinaigrette.
