Description

A comforting lasagna layered with creamy béchamel sauce, fresh spinach, and sautéed mushrooms, perfect for family gatherings.


Ingredients

  • Lasagna Noodles
  • 2 cups Fresh Mushrooms (cremini or button)
  • 2 cups Fresh Spinach
  • 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese
  • 1/2 cup Parmesan Cheese
  • 1 cup Heavy Cream
  • 2 cups Whole Milk
  • 4 tablespoons Butter
  • 4 tablespoons Flour
  • 2 cloves Garlic, minced
  • 1 small Onion, chopped
  • Salt and Pepper to taste
  • Dash of Nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the vegetables: Heat olive oil in a skillet, add onions and garlic, then mushrooms, cooking until golden. Finish by adding spinach until wilted.
  3. Prepare the béchamel sauce: Melt butter, whisk in flour for a couple of minutes, then gradually add milk and cream, whisk until thickened.
  4. Layer the lasagna: In a baking dish, add a layer of béchamel, lasagna noodles, mushroom-spinach mixture, ricotta, and mozzarella. Repeat until finished with a top layer of béchamel, mozzarella, and Parmesan.
  5. Bake: Cover with foil and bake for 25 minutes, uncover to bake for another 15 minutes until bubbly and golden.
  6. Rest before slicing for 10-15 minutes to firm up.

Notes

Serve with a side salad dressed with lemon vinaigrette.
