Description
A comforting dish of orzo pasta enveloped in a creamy spinach and Parmesan sauce, perfect for family gatherings.
Ingredients
Scale
- 1 cup orzo
- 2 cups fresh spinach, chopped
- 1 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup heavy cream
- 2 cups vegetable or chicken broth
- 1 teaspoon dried thyme or basil
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the orzo to the skillet, stirring to coat it in the garlicky oil.
- Pour in your broth and bring it to a gentle simmer, stirring occasionally; cook until al dente (about 10-12 minutes).
- Once the orzo has absorbed most of the broth, stir in the chopped spinach and let it wilt.
- Reduce the heat to low, then pour in the heavy cream and mix well.
- Add freshly grated Parmesan cheese, stirring until melted into the sauce.
- Season with salt, pepper, and herbs, serve warm garnished with extra Parmesan and herbs as desired.
Notes
Be cautious with the liquid to ensure creaminess; avoid adding too much broth at once.
