Description

A comforting dish of orzo pasta enveloped in a creamy spinach and Parmesan sauce, perfect for family gatherings.

Ingredients

Scale
  • 1 cup orzo
  • 2 cups fresh spinach, chopped
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 2 cups vegetable or chicken broth
  • 1 teaspoon dried thyme or basil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Add the orzo to the skillet, stirring to coat it in the garlicky oil.
  3. Pour in your broth and bring it to a gentle simmer, stirring occasionally; cook until al dente (about 10-12 minutes).
  4. Once the orzo has absorbed most of the broth, stir in the chopped spinach and let it wilt.
  5. Reduce the heat to low, then pour in the heavy cream and mix well.
  6. Add freshly grated Parmesan cheese, stirring until melted into the sauce.
  7. Season with salt, pepper, and herbs, serve warm garnished with extra Parmesan and herbs as desired.

Notes

Be cautious with the liquid to ensure creaminess; avoid adding too much broth at once.
