  • 1 cup cream or half-and-half
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Optional toppings: shredded cheese, avocado slices, tortilla strips

Instructions

  1. Prepare the ingredients: chop onion, mince garlic, rinse black beans and corn.
  2. Sauté aromatics: In a large pot, heat oil and sauté onions and garlic until fragrant (4-5 minutes).
  3. Brown the meat: Push the aromatics to the side, add ground meat, and cook until browned.
  4. Add spices: Sprinkle in cumin, chili powder, paprika, and oregano, stir to combine.
  5. Incorporate liquids: Pour in broth and add black beans and corn. Simmer for 10-15 minutes.
  6. Finish with cream: Lower heat, stir in cream or half-and-half, adjust seasoning to taste.
  7. Serve: Ladle soup into bowls and garnish with cilantro, cheese, avocado, or tortilla strips.

Notes

For a quicker option, use shredded rotisserie chicken or spicy sausage. Adjust cream and spices to personal taste.
