- 1 cup cream or half-and-half
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 can black beans, drained and rinsed
- 1 cup sweet corn
- Juice of 1 lime
- Fresh cilantro, for garnish
- Optional toppings: shredded cheese, avocado slices, tortilla strips
Instructions
- Prepare the ingredients: chop onion, mince garlic, rinse black beans and corn.
- Sauté aromatics: In a large pot, heat oil and sauté onions and garlic until fragrant (4-5 minutes).
- Brown the meat: Push the aromatics to the side, add ground meat, and cook until browned.
- Add spices: Sprinkle in cumin, chili powder, paprika, and oregano, stir to combine.
- Incorporate liquids: Pour in broth and add black beans and corn. Simmer for 10-15 minutes.
- Finish with cream: Lower heat, stir in cream or half-and-half, adjust seasoning to taste.
- Serve: Ladle soup into bowls and garnish with cilantro, cheese, avocado, or tortilla strips.
Notes
For a quicker option, use shredded rotisserie chicken or spicy sausage. Adjust cream and spices to personal taste.
