Instructions
- Sauté the chicken: In a large skillet over medium heat, add olive oil and allow it to warm. Season your chicken with salt and pepper and place it in the skillet, cooking for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
- Make the sauce: In the same skillet, add more oil if needed and toss in minced garlic, cooking until fragrant (about 30 seconds). Pour in the white wine and scrape up those brown bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.
- Add cream and tarragon: Carefully whisk in the heavy cream and broth, bringing the mixture to a gentle simmer. Stir in the chopped tarragon and adjust seasoning with salt and pepper to taste.
- Combine: Return the chicken to the skillet, allowing it to bathe in the sauce. Let it simmer for an additional 2-3 minutes until heated through.
- Finish with lemon: Just before serving, add a squeeze of lemon juice for brightness, stirring gently.
Notes
