  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 cup vegetable broth (or chicken broth if not vegetarian)
  • Fresh herbs (basil, thyme, or parsley)
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, stirring until they’re fragrant and the onion turns translucent.
  2. Toss in the sliced mushrooms and cook until they’re golden brown and tender.
  3. Add the fresh spinach to the skillet, stirring until it wilts down.
  4. Drain and rinse the canned butter beans, then toss them into the skillet.
  5. Pour in the heavy cream and vegetable broth. Stir until well-combined and bubbling, allowing it to simmer for about ten minutes.
  6. Season to taste with salt, pepper, and any desired herbs.
