- 2 cans butter beans, drained and rinsed
- 2 cups fresh spinach (can substitute with kale or Swiss chard)
- 1 cup mushrooms, sliced (cremini or button recommended)
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1 cup vegetable broth (or chicken broth if not vegetarian)
- Fresh herbs (basil, thyme, or parsley)
- Olive oil, for sautéing
- Salt and pepper, to taste
Instructions
- Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, stirring until they’re fragrant and the onion turns translucent.
- Toss in the sliced mushrooms and cook until they’re golden brown and tender.
- Add the fresh spinach to the skillet, stirring until it wilts down.
- Drain and rinse the canned butter beans, then toss them into the skillet.
- Pour in the heavy cream and vegetable broth. Stir until well-combined and bubbling, allowing it to simmer for about ten minutes.
- Season to taste with salt, pepper, and any desired herbs.
- Garnish with fresh herbs before serving.
Notes
Make sure to not overcook the spinach and mushrooms to preserve their colors and nutrients. Adjust seasoning throughout cooking for the best flavor.
