Description
Delightful cheesecake bars with a rich pink velvet base and creamy Oreo filling, perfect for Valentine’s Day.
Ingredients
Scale
- 1 box pink velvet cake mix
- 8 oz cream cheese, softened
- 1 cup Oreo cookies, crushed
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- Combine the pink velvet cake mix with melted butter and half of the crushed Oreos. Press this mixture evenly into the bottom of the lined baking dish to form a crust.
- Beat the softened cream cheese with sugar and vanilla until smooth. Add the eggs one at a time, mixing gently until everything is combined.
- Pour the cheesecake filling over the crust, spreading it evenly. Sprinkle the remaining crushed Oreo cookies on top for added texture.
- Bake for 30-35 minutes, or until the edges are set but the center still has a slight jiggle. Let it cool completely in the dish before refrigerating for at least two hours to set.
- Slice into squares and serve. Consider topping each square with whipped cream or fresh berries for an elegant touch.
Notes
For a gluten-free option, replace regular flour in the cake mix with almond flour. Ensure cream cheese is at room temperature for smooth texture.
