Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup heavy cream
  • 1 cup chopped pecans, toasted
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt 2 tablespoons of butter and add ½ cup of brown sugar, stirring until it bubbles. Add the pecans, toss to coat, and let cool.
  3. In a mixing bowl, cream together 1 cup of butter and 1 cup of granulated sugar until fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. In another bowl, whisk together flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with 1 cup of heavy cream.
  7. Grease and flour a 9-inch round cake pan. Pour half of the batter, sprinkle with caramelized pecans, then top with remaining batter.
  8. Bake for 25–30 minutes until a toothpick comes out clean.
  9. Cool the cake, then sprinkle sugar on top and caramelize with a kitchen torch or under the broiler.
  10. Let set, then serve with whipped cream or fresh fruit.
