- 2 large eggs

- Granulated sugar for caramelizing topping
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter and sugar in a mixing bowl until light and fluffy.
- Add eggs one at a time, mixing in lemon juice, lemon zest, and vanilla extract until combined.
- Whisk together the flour and baking powder in a separate bowl before gradually adding to the wet ingredients.
- Drop balls of dough onto prepared baking sheets, spacing them apart.
- Once slightly cooled, sprinkle granulated sugar on top of each cookie and caramelize with a kitchen torch or broiler.
- Allow to cool completely before serving to let the sugar topping harden.
