- 2 tablespoons olive oil
- 1 cup panko breadcrumbs
- 1 teaspoon salt
- 1 teaspoon cracked black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons fresh parsley or dill (or 1 tablespoon dried herbs)
- Lemon wedges, for serving
Instructions
- Pat the cod fillets dry with a paper towel to remove excess moisture.
- In a small bowl, mix olive oil, salt, pepper, garlic powder, and paprika. Coat the cod fillets on both sides with this mixture.
- Pour the panko breadcrumbs into a shallow dish and press the seasoned cod into the breadcrumbs, ensuring an even coating on both sides.
- Preheat your air fryer to 400°F (200°C). Arrange the coated fillets in a single layer in the air fryer basket, ensuring they don’t overlap.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy. Ensure the internal temperature reaches 145°F (63°C).
- Serve immediately with lemon wedges and enjoy!
