Ingredients

- 1 pound shrimp, fresh or frozen, deveined
- 2 tablespoons Cajun seasoning
- 1 cup grits (stone-ground preferred)
- 4 cups water or broth
- ½ cup heavy cream
- 2 tablespoons butter
- ½ cup diced onion
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Boil water or broth in a pot, whisk in grits, reduce heat to low, and stir occasionally for 20-30 minutes. Add heavy cream and butter towards the end.
- While grits cook, pat shrimp dry, mix with Cajun seasoning, salt, and pepper. Marinate for 15 minutes.
- In a skillet, heat olive oil and sauté shrimp for 2-3 minutes on each side until pink and crispy. Remove and set aside.
- Sauté onion and garlic in the same skillet for 2-3 minutes until fragrant.
- Serve grits in bowls, top with shrimp, and garnish with green onions and extra Cajun seasoning if desired.
Notes
For added flavor, use chicken or seafood broth instead of water for cooking the grits.
