Ingredients
- Boneless, skinless chicken breasts or thighs
- Dill pickles, sliced
- Freshly grated Parmesan cheese
- Breadcrumbs (seasoned or homemade)
- Eggs
- All-purpose flour
- Salt and pepper
- Optional herbs (dill, garlic powder)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the chicken by rinsing and drying it; pound to an even thickness if using breasts.
- Set up your breading station: whisk eggs in one bowl, mix flour, salt, and pepper in another, and combine breadcrumbs with Parmesan and herbs in a third.
- Bread each chicken piece: dredge in flour, dip in egg, then coat with the breadcrumb mixture.
- Add sliced pickles on a tray, and optionally, arrange some on top of the breaded chicken.
- Bake on a lined baking sheet for 25-30 minutes, or until golden brown and internal temperature reaches 165°F (75°C).
