Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Dill pickles, sliced
  • Freshly grated Parmesan cheese
  • Breadcrumbs (seasoned or homemade)
  • Eggs
  • All-purpose flour
  • Salt and pepper
  • Optional herbs (dill, garlic powder)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken by rinsing and drying it; pound to an even thickness if using breasts.
  3. Set up your breading station: whisk eggs in one bowl, mix flour, salt, and pepper in another, and combine breadcrumbs with Parmesan and herbs in a third.
  4. Bread each chicken piece: dredge in flour, dip in egg, then coat with the breadcrumb mixture.
  5. Add sliced pickles on a tray, and optionally, arrange some on top of the breaded chicken.
  6. Bake on a lined baking sheet for 25-30 minutes, or until golden brown and internal temperature reaches 165°F (75°C).
