Ingredients

  • 1 lb fresh fish (tilapia, cod, or mahi-mahi)
  • 1 cup feta cheese, crumbled
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 1/4 cup fresh herbs (dill or parsley), chopped
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 8 tortillas (corn or flour)
  • 1 cup fresh slaw (cabbage, carrots, lime juice)
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk the eggs in one bowl. In another bowl, combine panko breadcrumbs, feta cheese, herbs, and spices.
  3. Dip the fish fillets in the egg mixture, then coat generously with the feta breadcrumb mixture.
  4. Place the breaded fish on a baking tray lined with parchment paper. Bake for 15–20 minutes until golden brown and flaky.
  5. Prepare your slaw by mixing shredded cabbage, carrots, lime juice, salt, and pepper in a bowl.
  6. Warm your tortillas in a dry skillet or microwave until pliable.
  7. Assemble your tacos by adding the fish, a generous scoop of slaw, and avocado slices, if desired.
  8. Squeeze fresh lime juice over the top for an added zing.

Notes

For a lighter touch, skip the breadcrumbs entirely or substitute fish with shrimp or eggplant.
