- 1 lb fresh fish (tilapia, cod, or mahi-mahi)
- 1 cup feta cheese, crumbled
- 1 cup panko breadcrumbs
- 2 eggs
- 1/4 cup fresh herbs (dill or parsley), chopped
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- 8 tortillas (corn or flour)
- 1 cup fresh slaw (cabbage, carrots, lime juice)
- 1 avocado, sliced (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk the eggs in one bowl. In another bowl, combine panko breadcrumbs, feta cheese, herbs, and spices.
- Dip the fish fillets in the egg mixture, then coat generously with the feta breadcrumb mixture.
- Place the breaded fish on a baking tray lined with parchment paper. Bake for 15–20 minutes until golden brown and flaky.
- Prepare your slaw by mixing shredded cabbage, carrots, lime juice, salt, and pepper in a bowl.
- Warm your tortillas in a dry skillet or microwave until pliable.
- Assemble your tacos by adding the fish, a generous scoop of slaw, and avocado slices, if desired.
- Squeeze fresh lime juice over the top for an added zing.
Notes
For a lighter touch, skip the breadcrumbs entirely or substitute fish with shrimp or eggplant.
