Ingredients

- 1 lb fresh shrimp, peeled and deveined
- 8 slices thick-sliced bacon
- 1 oz black truffles or 1 tbsp truffle oil
- 4 oz cream cheese
- 2 tbsp fresh chives or parsley, chopped
- 2 cloves garlic, minced
- Sea salt and freshly cracked black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine shrimp, minced garlic, salt, and pepper. Fold in chopped black truffles or truffle oil and marinate.
- Whip cream cheese until smooth, then fold in fresh herbs.
- Form small balls of the cream cheese mixture and encase a piece of shrimp in each ball.
- Cut bacon slices in half and wrap each shrimp ball, securing tightly.
- Arrange on a baking tray lined with parchment paper, seam-side down.
- Bake for 20-25 minutes or until bacon is crispy and shrimp is pink.
- Let cool slightly before serving. Optionally, broil for 2-3 minutes for extra crispiness.
Notes
Serve with a side salad or garlic mashed potatoes. These can be prepared ahead of time and frozen before baking.
