- 4 cod fillets, thawed and patted dry
- 1 cup panko breadcrumbs

Instructions
- Preheat your oven to 425°F (220°C).
- Prepare a baking sheet by lightly greasing it or lining with parchment paper.
- Mix the panko breadcrumbs, Parmesan, garlic, herbs, salt, and pepper in a bowl. Drizzle in olive oil and combine.
- Pat the cod fillets dry and season with salt and pepper. Dredge in the panko mixture.
- Bake for 12-15 minutes until opaque and golden brown.
