Ingredients

  • 4 boneless, skinless chicken cutlets
  • 1 cup freshly grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/4 cup butter
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by placing cutlets between plastic wrap and gently pound to 1/2-inch thick.
  2. Set up a breading station with eggs beaten in one bowl and a mixture of breadcrumbs, parmesan, and seasonings in another.
  3. Coat each cutlet first in the egg mixture, then in the breadcrumb mixture.
  4. Heat butter in a large skillet over medium heat.
  5. Fry cutlets in the skillet until golden brown, about 3-4 minutes per side.
  6. Drain cutlets on paper towels and serve hot, garnished with fresh herbs.

Notes

For a twist, use finely grated cheddar instead of parmesan or gluten-free breadcrumbs for a gluten-free option. Adding crushed red pepper flakes can give a nice kick.
