- 1 cup freshly grated parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- 1/4 cup butter
- 2 tablespoons fresh parsley, chopped

- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Prepare the chicken by placing cutlets between plastic wrap and gently pound to 1/2-inch thick.
- Set up a breading station with eggs beaten in one bowl and a mixture of breadcrumbs, parmesan, and seasonings in another.
- Coat each cutlet first in the egg mixture, then in the breadcrumb mixture.
- Heat butter in a large skillet over medium heat.
- Fry cutlets in the skillet until golden brown, about 3-4 minutes per side.
- Drain cutlets on paper towels and serve hot, garnished with fresh herbs.
Notes
For a twist, use finely grated cheddar instead of parmesan or gluten-free breadcrumbs for a gluten-free option. Adding crushed red pepper flakes can give a nice kick.
