Ingredients

  • 2 large sweet onions (Vidalia or Walla Walla)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Italian seasoning or dried thyme (optional)

Instructions

  1. Slice the onions into thin rings and pat them dry with a paper towel.
  2. Set up three bowls: Combine flour with salt and pepper in the first bowl; beat the eggs in the second bowl; mix breadcrumbs, Parmesan, garlic powder, and herbs in the third bowl.
  3. Dredge each onion ring in flour, dip in egg, and then coat with the breadcrumb mixture.
  4. Heat oil in a skillet over medium heat and fry the onion rings in batches until golden brown, about 3-5 minutes, flipping halfway.
  5. Drain on paper towels and serve warm with your favorite dip.
