Ingredients

- 2 large sweet onions (Vidalia or Walla Walla)
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 tsp garlic powder
- Salt and pepper to taste
- Italian seasoning or dried thyme (optional)
Instructions
- Slice the onions into thin rings and pat them dry with a paper towel.
- Set up three bowls: Combine flour with salt and pepper in the first bowl; beat the eggs in the second bowl; mix breadcrumbs, Parmesan, garlic powder, and herbs in the third bowl.
- Dredge each onion ring in flour, dip in egg, and then coat with the breadcrumb mixture.
- Heat oil in a skillet over medium heat and fry the onion rings in batches until golden brown, about 3-5 minutes, flipping halfway.
- Drain on paper towels and serve warm with your favorite dip.
Notes
