- 1 cup rice flour
- 2 large eggs
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped

- 1 tsp salt
- Oil for frying
Instructions
- Prepare the rice: If using leftover rice, make sure it’s fluffy. If cooking fresh, rinse it well before cooking to remove excess starch. Allow to cool.
- Mix the base: In a large bowl, combine the cooled rice, rice flour, eggs, minced garlic, fresh herbs, and spices. Mix until everything is nicely combined.
- Heat the skillet: In a large skillet, heat a generous amount of oil over medium heat.
- Form the pancakes: Scoop a handful of the mixture and gently press it into a patty. Place it carefully in the skillet.
- Cook until golden: Fry the pancakes for 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes.
- Drain excess oil: Remove the pancakes from the skillet and place them on a paper towel-lined plate.
- Prepare the spicy dipping sauce: Whisk together soy sauce, lime juice, green chilis, and sesame oil in a small bowl.
- Serve warm: Enjoy the crispy rice pancakes hot from the skillet, accompanied by your spicy dipping sauce.
