Ingredients

  • 2 cups boneless chicken (breast or thighs), cooked and shredded
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cheese (mozzarella and pepper jack), shredded
  • 4 large flour tortillas
  • 12 fresh jalapeños, diced (optional)
  • Oil for frying

Instructions

  1. Heat oil in a skillet over medium heat. Add diced onions and minced garlic; cook until soft.
  2. Add the shredded chicken, cumin, paprika, chili powder, and jalapeños. Mix until well-coated and heated through.
  3. Place a generous spoonful of the chicken mixture and a sprinkle of cheese in the center of each tortilla.
  4. Fold in the sides and roll from the bottom to close. Secure with toothpicks if necessary.
  5. Heat oil in a deep skillet. Carefully add chimichangas seam side down; fry until golden and crispy, about 3-4 minutes per side.
  6. Transfer to a paper towel-lined plate to drain excess oil. Serve warm with sour cream, salsa, or guacamole.

Notes

For a vegetarian option, substitute chicken with black beans and sautéed vegetables. Leftover cooked chicken works great as a time-saver.
