- 1 cup ube (purple yam), peeled and steamed
- 1 ½ cups all-purpose flour (or gluten-free blend)
- 2 tsp baking powder
- ¼ cup sugar (adjust to taste)
- 1 cup milk (regular or plant-based)
- 2 large eggs (or flax egg for vegan)
- ¼ tsp salt
- ½ cup melted butter (or vegan butter)
- 1 tsp vanilla extract
Instructions
- Prepare the ube: Peel and steam your ube until tender, about 15-20 minutes. Mash until smooth and set aside.
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- Combine wet ingredients: In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Mix until blended.
- Fold the wet mixture into the dry ingredients until just combined. Fold in the mashed ube.
- Heat the waffle iron according to the manufacturer’s instructions, greasing lightly with melted butter.
- Cook the waffles: Pour about ½ cup batter onto the hot waffle iron. Cook until golden brown and crispy, about 5 minutes.
- Serve warm, topped with whipped cream, fresh fruits, or maple syrup.
Notes
For extra crispiness, keep cooked waffles warm in a preheated oven at 200°F (93°C) while you finish the rest.
