Instructions
- Start by marinating the chicken. Mix coconut milk with garlic, ginger, salt, and fish sauce in a bowl. Add the chicken, cover it, and let it soak for at least an hour—overnight is even better if you have time!
- Prepare the breading station using rice flour and cornstarch in one shallow dish and a beaten egg in another.
- Heat oil in a deep skillet over medium heat, aiming for about 350°F for frying.
- Coat each piece of chicken in the egg, followed by the flour mixture, pressing the coating against the chicken.
- Fry the chicken in batches, about 5-7 minutes per side until golden brown. Drain on a wire rack.
- Meanwhile, mix your slaw with cabbage, carrots, lime juice, fish sauce, and herbs.
- Assemble the sandwich with the bun, crispy chicken, and slaw, and drizzle spicy mayo or sriracha on top!
