- 2 lbs beef (chuck roast or brisket)
- 4 cups beef broth
- 2 cans (14.5 oz) diced tomatoes
- 1 cup bell peppers, chopped
- 1 cup corn, frozen or fresh
- 1 onion, diced
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- 2 cups tortilla strips
- Fresh cilantro or green onions, for garnish
- Lime juice, to taste
Instructions
- Season the beef with salt, pepper, and chili powder.
- Place seasoned beef in the crockpot and add diced tomatoes, broth, onion, bell peppers, corn, and garlic powder.
- Generously sprinkle cumin and chili powder over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
- Shred the beef with two forks and mix back into the soup.
- Add lime juice and chopped cilantro or green onions before serving.
