Ingredients

  • 2 lbs beef (chuck roast or brisket)
  • 4 cups beef broth
  • 2 cans (14.5 oz) diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 cup corn, frozen or fresh
  • 1 onion, diced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 2 cups tortilla strips
  • Fresh cilantro or green onions, for garnish
  • Lime juice, to taste

Instructions

  1. Season the beef with salt, pepper, and chili powder.
  2. Place seasoned beef in the crockpot and add diced tomatoes, broth, onion, bell peppers, corn, and garlic powder.
  3. Generously sprinkle cumin and chili powder over the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  5. Shred the beef with two forks and mix back into the soup.
  6. Add lime juice and chopped cilantro or green onions before serving.

Notes
