Instructions
- Prep the ingredients: Wash and peel potatoes, chop them into 1-inch cubes, rinse broccoli, and break into small florets. Dice onion and mince garlic.
- Sauté the onion and garlic in butter for enhanced flavor (optional).
- Combine the cubed potatoes and broccoli in the crockpot, followed by the sautéed onion and garlic. Add the broth and stir.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Add shredded cheese about 30 minutes before serving, stirring to melt evenly.
- Blend a portion for a creamier texture, if desired.
- Adjust seasoning with salt and pepper before serving.
- Serve in bowls and enjoy with a sprinkle of cheese or hot sauce.
