Description

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 packet of gravy mix
  • 1 cup chicken broth
  • 1 onion, chopped
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 tsp thyme
  • 1 tsp parsley
  • 2 tbsp olive oil
  • Optional: 4 oz cream cheese or sour cream

Instructions

  1. Season the chicken with salt and pepper.
  2. In a pan, heat olive oil and sauté the chopped onion and mushrooms until softened.
  3. Layer the seasoned chicken in the crockpot, then add sautéed onions and mushrooms on top.
  4. Sprinkle the gravy mix over the chicken layer.
  5. Pour chicken broth evenly over everything.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Stir in cream cheese or sour cream 30 minutes before serving, if desired.
  8. Shred the chicken and stir to combine before serving hot over rice or mashed potatoes.
