- 2 lbs boneless, skinless chicken thighs
- 1 packet of gravy mix
- 1 cup chicken broth
- 1 onion, chopped
- 8 oz fresh mushrooms (button or cremini), sliced
- 1 tsp thyme
- 1 tsp parsley
- 2 tbsp olive oil
- Optional: 4 oz cream cheese or sour cream
Instructions
- Season the chicken with salt and pepper.
- In a pan, heat olive oil and sauté the chopped onion and mushrooms until softened.
- Layer the seasoned chicken in the crockpot, then add sautéed onions and mushrooms on top.
- Sprinkle the gravy mix over the chicken layer.
- Pour chicken broth evenly over everything.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in cream cheese or sour cream 30 minutes before serving, if desired.
- Shred the chicken and stir to combine before serving hot over rice or mashed potatoes.
