Ingredients

  • 2 lbs ground meat (beef, turkey, or chicken)
  • 1 cup bread crumbs
  • 2 large eggs
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 cup sliced button or cremini mushrooms
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 2 tbsp brown sugar

Instructions

  1. Sauté the Aromatics: In a skillet, add a drizzle of olive oil and sauté diced onions and minced garlic over medium heat for about 5 minutes until softened.
  2. Prepare the Meat Mixture: In a large mixing bowl, combine ground meat, sautéed onions and garlic, sliced mushrooms, breadcrumbs, eggs, Worcestershire sauce, salt, and pepper.
  3. Shape the Loaf: Lightly grease your crockpot and shape the meat mixture into a loaf inside the crockpot.
  4. Add the Toppings: Mix ketchup with brown sugar and spread it evenly over the top of the meatloaf.
  5. Cook Slowly: Cover and set to low for 6-8 hours or high for 4-5 hours.
  6. Check for Doneness: Use a meat thermometer to check for an internal temperature of 160°F (70°C).
