- 4 large Potatoes (Yukon Gold or Russet)
- 1 Onion (yellow or sweet)
- 3 Garlic cloves (fresh, minced)
- 4 cups Broth (vegetable or chicken)
- 1 cup Heavy cream or half-and-half
- 2 tablespoons Butter
- Salt and pepper to taste
- 1 teaspoon Thyme (fresh or dried)
- 1/4 cup Parsley (fresh, chopped)
Instructions
- Prep the ingredients: Peel and dice the potatoes, and chop the onion and garlic.
- Layer in the slow cooker: Place the chopped potatoes, onions, and garlic into your slow cooker. Add salt, pepper, and any herbs you love.
- Add the broth: Pour in enough broth to cover the potatoes, about four cups.
- Set the temperature: Cook on low for 6-8 hours or on high for 3-4 hours.
- Sauté (optional): For an extra flavor kick, consider sautéing the onions and garlic in butter before adding them to the pot.
- Blend for creaminess: About 30 minutes before serving, blend part of the soup with an immersion blender if desired.
- Finish with cream: Stir in the heavy cream or half-and-half about 15-20 minutes before serving.
- Adjust seasonings: Taste your soup and adjust seasoning as necessary.
- Serve and enjoy: Ladle your finished soup into bowls and top with extra herbs, cheese, or crispy bacon if desired.
