A delightful sushi roll filled with creamy avocado, sweet imitation crab, and crisp cucumber, finished with a crunchy tempura topping.
Ingredients

- 2 cups sushi rice
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- Pinch of salt
- 1 avocado, sliced
- 1 cucumber, sliced into thin strips
- 8 oz imitation crab, shredded
- Tempura flakes, for topping
- Nori sheets
- Soy sauce, for serving
- Wasabi, for serving
Instructions
- Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions and mix in rice vinegar, sugar, and salt. Let it cool to room temperature.
- While cooling, slice cucumber into strips and prepare avocado.
- On a bamboo mat, lay a sheet of nori, wet hands, and spread sushi rice evenly, leaving a border at the top.
- In the center of the rice, layer cucumber, avocado, and imitation crab.
- Roll the mat tightly, moistening nori edges to seal.
- Slice the roll into 8 pieces and top with tempura flakes.
Notes
For variations, substitute imitation crab with shrimp or tofu. Use crushed noodles if tempura flakes are unavailable.
