Description

A delightful sushi roll filled with creamy avocado, sweet imitation crab, and crisp cucumber, finished with a crunchy tempura topping.


Ingredients

Scale
  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • Pinch of salt
  • 1 avocado, sliced
  • 1 cucumber, sliced into thin strips
  • 8 oz imitation crab, shredded
  • Tempura flakes, for topping
  • Nori sheets
  • Soy sauce, for serving
  • Wasabi, for serving

Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions and mix in rice vinegar, sugar, and salt. Let it cool to room temperature.
  2. While cooling, slice cucumber into strips and prepare avocado.
  3. On a bamboo mat, lay a sheet of nori, wet hands, and spread sushi rice evenly, leaving a border at the top.
  4. In the center of the rice, layer cucumber, avocado, and imitation crab.
  5. Roll the mat tightly, moistening nori edges to seal.
  6. Slice the roll into 8 pieces and top with tempura flakes.

Notes

For variations, substitute imitation crab with shrimp or tofu. Use crushed noodles if tempura flakes are unavailable.
