- 1 cup breadcrumbs (plain or seasoned)
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme or rosemary
- 1 cup fresh cranberries
- 1 tablespoon sugar (optional)
- Zest of 1 orange
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the turkey fillets dry with paper towels and season both sides with salt, pepper, and garlic.
- In a shallow dish, combine breadcrumbs, minced garlic, and herbs. (Optional: add Parmesan cheese).
- Brush each turkey fillet with olive oil, then press it into the breadcrumb mixture for an even coating.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the fillets for 3-4 minutes on each side until golden brown.
- Transfer the fillets to a baking dish and bake for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
- For the cranberry sauce, combine cranberries, a splash of water, sugar, and orange zest in a saucepan. Simmer until cranberries burst and sauce thickens, about 10 minutes.
- Plate the turkey, drizzle with warm cranberry sauce, and garnish with additional herbs if desired.
Notes
Let the turkey rest for 5 minutes after cooking to keep it moist. You can freeze leftovers for up to 3 months.
