  • Zest of 1 orange
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey fillets dry with paper towels and season both sides with salt, pepper, and garlic.
  3. In a shallow dish, combine breadcrumbs, minced garlic, and herbs. (Optional: add Parmesan cheese).
  4. Brush each turkey fillet with olive oil, then press it into the breadcrumb mixture for an even coating.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the fillets for 3-4 minutes on each side until golden brown.
  6. Transfer the fillets to a baking dish and bake for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  7. For the cranberry sauce, combine cranberries, a splash of water, sugar, and orange zest in a saucepan. Simmer until cranberries burst and sauce thickens, about 10 minutes.
  8. Plate the turkey, drizzle with warm cranberry sauce, and garnish with additional herbs if desired.

Notes

Let the turkey rest for 5 minutes after cooking to keep it moist. You can freeze leftovers for up to 3 months.
