Ingredients

  • 4 boneless, skinless turkey fillets
  • 2 cups fresh cranberries
  • 1 cup water
  • ½ cup sugar
  • 1 cup bread crumbs (panko preferred)
  • 2 cloves garlic, minced
  • Fresh thyme, sage, and parsley
  • 2 tablespoons melted butter
  • Olive oil for frying
  • Salt and pepper to taste

Instructions

  1. In a saucepan, combine cranberries, water, sugar, and a pinch of salt; bring to a boil and simmer for about 10 minutes until thickened.
  2. Pat turkey fillets dry and season with salt and pepper.
  3. In a bowl, mix bread crumbs, garlic, and herbs; add melted butter and combine.
  4. Preheat oven to 375°F (190°C). Coat turkey fillets in breadcrumb mixture.
  5. In a skillet, sear fillets in olive oil for 3-4 minutes on each side until golden brown.
  6. Transfer seared fillets to a baking dish and bake for 15-20 minutes until cooked to 165°F (75°C).
  7. Plate turkey fillets and spoon cranberry sauce on top.

Notes

Avoid overcooking the turkey; let it rest for 5 minutes after baking to retain juices.
