Description

Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 can (14 oz) coconut milk
  • 2 tbsp olive or coconut oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 23 tsp curry powder
  • 1 cup chicken or vegetable broth
  • 1 cup mixed vegetables (bell peppers, carrots, peas)
  • Fresh cilantro or green onions, for garnish
  • Lime wedges, for serving
  • Chili (fresh or paste), to taste

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add onions, garlic, and ginger; sauté until fragrant and onions are translucent.
  3. Stir in curry powder and let bloom for a minute.
  4. Add chicken pieces and sear until golden brown.
  5. Pour in coconut milk and broth, bring to a gentle simmer.
  6. Add vegetables and simmer until cooked through.
  7. Cook rice according to package instructions separately.
  8. Serve the Curried Coconut Chicken over a scoop of rice, garnished with herbs and a squeeze of lime.

Notes

Adjust spices to your taste. Feel free to substitute chicken with tofu or shrimp for a different protein option.
