- 1 lb boneless chicken (breast or thighs)
- 1 can (14 oz) coconut milk
- 2 tbsp olive or coconut oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2–3 tsp curry powder
- 1 cup chicken or vegetable broth
- 1 cup mixed vegetables (bell peppers, carrots, peas)
- Fresh cilantro or green onions, for garnish
- Lime wedges, for serving
- Chili (fresh or paste), to taste
Instructions
- Heat oil in a large skillet over medium heat.
- Add onions, garlic, and ginger; sauté until fragrant and onions are translucent.
- Stir in curry powder and let bloom for a minute.
- Add chicken pieces and sear until golden brown.
- Pour in coconut milk and broth, bring to a gentle simmer.
- Add vegetables and simmer until cooked through.
- Cook rice according to package instructions separately.
- Serve the Curried Coconut Chicken over a scoop of rice, garnished with herbs and a squeeze of lime.
Notes
Adjust spices to your taste. Feel free to substitute chicken with tofu or shrimp for a different protein option.
