- 1 cup heavy whipping cream
- 3 large eggs
- 1/4 cup granulated sugar
- 1 tsp peppermint extract
- 1 tart crust (store-bought or homemade)
Instructions
- Prepare the Tart Crust: If making from scratch, combine flour, sugar, and cold butter pieces, mix until crumbly. Add cold water until a dough forms. Press into a tart pan and chill for at least 30 minutes. Pre-bake at 350°F for 15-20 minutes until golden.
- Melt the Chocolate: In a double boiler, melt dark chocolate gently, stirring until smooth. Remove from heat and let cool slightly.
- Whip the Cream: In a large bowl, whip heavy cream until soft peaks form. Gently fold half of the cream into the melted chocolate.
- Incorporate Eggs: In another bowl, beat eggs and sugar together until light and fluffy. Gradually fold this mixture into the chocolate, being careful not to deflate the mousse.
- Add Peppermint: Stir peppermint extract into the mousse until evenly distributed.
- Combine Cream: Fold the remaining whipped cream into the chocolate mixture gently.
- Fill the Crust: Pour the mousse into the pre-baked tart shell, smoothing the top.
- Chill: Refrigerate for at least 240 minutes (overnight is best) for the mousse to set properly.
- Garnish and Serve: Once set, garnish with crushed peppermint candies or cocoa powder before slicing.
Notes
For a dairy-free version, consider using coconut cream instead of heavy whipping cream. To infuse flavors, substitute half the peppermint extract with orange zest.
