- 1 cup Medjool dates
- 1/2 cup almonds or peanuts (chopped)
- 1/2 cup natural peanut butter or almond butter
- 1/4 cup cocoa powder or chocolate chips
- 1/4 tsp sea salt
- 1 tsp vanilla extract
Instructions
- Start by pitting the Medjool dates and soaking them in warm water for about 10 minutes if they are stiff.
- Combine the softened dates, nut butter, vanilla extract, and a pinch of sea salt in a food processor. Pulse until sticky and smooth.
- Fold in the chopped almonds or peanuts and cocoa powder or chocolate chips using a spatula.
- Line an 8×8 baking dish with parchment paper and pour in the mixture. Press it down firmly.
- Chill the dish in the fridge for at least 60 minutes to firm up.
- Cut into bars or squares after chilling. Dip in melted dark chocolate if desired.
- Store the leftovers in an airtight container for up to a week at room temperature or in the fridge.
Notes
Experiment with different nuts or add chia seeds for extra nutrition. Ensure to press the mixture firmly in the pan to avoid crumbly bars.
