Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 24 oz full-fat cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1 cup fresh cranberries
  • 1 cup heavy whipping cream
  • 1 tbsp orange zest

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine crushed graham crackers, melted butter, and sugar until sandy.
  3. Press the mixture into the bottom of a springform pan and bake for 10 minutes.
  4. Beat cream cheese and sour cream until smooth.
  5. Gradually add sugar and mix, followed by the eggs one at a time.
  6. Fold in the orange zest and pour the mixture over the crust.
  7. Bake for about 60 minutes until edges are set and center jiggles.
  8. Cool in the oven with the door cracked for an hour.
  9. Simmer cranberries and sugar with water until they burst into a sauce.
  10. Whip the cream until soft peaks form and fold into the cranberry sauce.
  11. Spread the cranberry mousse over the cheesecake and chill for at least 4 hours.
  12. Top with fresh cranberries and whipped cream before serving.
