A rich, airy chocolate mousse that brings joy and nostalgia with every spoonful.
Ingredients

- 200g good quality dark chocolate (70% cocoa)
- 300ml heavy cream
- 3 large eggs, room temperature
- 75g granulated sugar
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- Begin by melting the chocolate using a double boiler or microwave. If using a microwave, heat in 30-second intervals, stirring in between.
- Allow the melted chocolate to cool slightly before mixing in the vanilla and a pinch of salt.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold a third into the cooled chocolate to lighten it, then incorporate the remaining cream carefully.
- In a clean bowl, whip the egg whites with the granulated sugar until stiff peaks form, then gently fold into the chocolate mixture.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.
Notes
Don’t overmix at any stage; keep the mousse fluffy. Serve with whipped cream or fresh berries for added flavor.
