Description

A rich, airy chocolate mousse that brings joy and nostalgia with every spoonful.


Ingredients

  • 200g good quality dark chocolate (70% cocoa)
  • 300ml heavy cream
  • 3 large eggs, room temperature
  • 75g granulated sugar
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Begin by melting the chocolate using a double boiler or microwave. If using a microwave, heat in 30-second intervals, stirring in between.
  2. Allow the melted chocolate to cool slightly before mixing in the vanilla and a pinch of salt.
  3. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold a third into the cooled chocolate to lighten it, then incorporate the remaining cream carefully.
  4. In a clean bowl, whip the egg whites with the granulated sugar until stiff peaks form, then gently fold into the chocolate mixture.
  5. Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.

Notes

Don’t overmix at any stage; keep the mousse fluffy. Serve with whipped cream or fresh berries for added flavor.
