Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  3. Beat in the eggs, one at a time, followed by the vanilla, scraping the bowl’s sides.
  4. Whisk together the flour, baking powder, and sea salt in another bowl, then gradually mix into wet ingredients.
  5. Scoop rounded mounds of dough onto the baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, until edges are just golden.
  7. Remove from oven and sprinkle with demarara or turbinado sugar; caramelize the sugar using a kitchen torch or broiler.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
