Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
- Beat in the eggs, one at a time, followed by the vanilla, scraping the bowl’s sides.
- Whisk together the flour, baking powder, and sea salt in another bowl, then gradually mix into wet ingredients.
- Scoop rounded mounds of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until edges are just golden.
- Remove from oven and sprinkle with demarara or turbinado sugar; caramelize the sugar using a kitchen torch or broiler.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a nuttier flavor, consider using brown butter. You can substitute granulated sugar for brown sugar for deeper flavor.
