  • 1 tsp vanilla extract

  • 1/2 tsp baking powder
  • 1/4 tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a food processor, pulse unsalted pistachios until they reach a fine paste.
  3. Cream together the butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla to the creamed mixture, stirring well until fully combined.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add to the wet mixture.
  6. Fold in the pistachio cream gently.
  7. Use a tablespoon to place dollops of dough onto your prepared sheets, leaving space between each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For a different flavor, consider using almond flour in place of some all-purpose flour.
