- 1 cup unsalted pistachio nuts
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp sea salt
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a food processor, pulse unsalted pistachios until they reach a fine paste.
- Cream together the butter, granulated sugar, and brown sugar until fluffy.
- Add the egg and vanilla to the creamed mixture, stirring well until fully combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add to the wet mixture.
- Fold in the pistachio cream gently.
- Use a tablespoon to place dollops of dough onto your prepared sheets, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to wire racks.
Notes
For a different flavor, consider using almond flour in place of some all-purpose flour.
