Ingredients

  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, softened
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup heavy cream
  • 8 oz semi-sweet or dark chocolate, chopped
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your mini cake pans.
  2. Mix the dry ingredients: In a large bowl, combine the flour, cocoa powder, baking soda, baking powder, and sugar. Whisk together until well blended.
  3. Cream the butter: In another bowl, beat the softened butter until creamy. Add sugar gradually, mixing until lightweight and fluffy.
  4. Incorporate eggs and vanilla: One at a time, add the eggs to the butter mixture, followed by the vanilla extract. Mix until smooth.
  5. Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with milk until you have a smooth batter.
  6. Pour the batter into pans: Fill each mini cake pan about two-thirds full. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes: Let them cool in the pans for about 10 minutes, then turn them out on a wire rack to cool completely.
  8. Prepare the ganache: In a saucepan, heat the heavy cream until just below boiling. Remove from heat and add the chopped chocolate, stirring until completely melted and smooth.
  9. Assemble your mini cakes: Once the cakes are cool, stack them with layers of ganache in between. Top with fresh strawberries and drizzle more ganache over the top.
  10. Serve and enjoy: Dust with powdered sugar for an added touch, and dig in!

Notes

Be careful not to overbake and ensure the cakes cool completely before assembling; this will help prevent the ganache from melting.
