- 1 cup milk
- 2 eggs
- 1 can corn (or fresh corn)
- 1 cup cheddar cheese (or Monterey Jack)
- 1 onion, chopped
- 1 bell pepper, chopped

Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch casserole dish with butter or cooking spray.
- In a skillet over medium heat, sauté chopped onions and bell peppers until tender, about 5 minutes.
- In a large mixing bowl, whisk together cornmeal, milk, and eggs. Add sautéed vegetables, corn, cheese, salt, and pepper. Mix until just combined.
- Pour the mixture into your baking dish, spreading it evenly.
- Bake for about 30-35 minutes, or until the top is golden and the center is set.
- Allow it to cool for a few minutes before slicing into squares.
Notes
For an extra kick, consider adding diced jalapeños or a splash of hot sauce. You can also make it ahead of time and reheat before serving.
