Ingredients

  • 2 eggs

  • 1 cup cheddar cheese (or Monterey Jack)
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13-inch casserole dish with butter or cooking spray.
  3. In a skillet over medium heat, sauté chopped onions and bell peppers until tender, about 5 minutes.
  4. In a large mixing bowl, whisk together cornmeal, milk, and eggs. Add sautéed vegetables, corn, cheese, salt, and pepper. Mix until just combined.
  5. Pour the mixture into your baking dish, spreading it evenly.
  6. Bake for about 30-35 minutes, or until the top is golden and the center is set.
  7. Allow it to cool for a few minutes before slicing into squares.

Notes
