- 2 pounds Yukon Gold or Red Potatoes
- 1 cup crumbled Feta Cheese
- 1/4 cup Extra Virgin Olive Oil
- 3 cloves fresh Garlic, minced

- 2 tablespoons Lemon Juice or Zest

Instructions
- Prepare the Potatoes: Wash the potatoes thoroughly and place them in a pot covered with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain & Smash: Drain the cooked potatoes and return them to the pot. Use a potato masher to gently smash each potato to your desired texture.
- Add Flavors: Drizzle in olive oil, add minced garlic, chopped herbs, and lemon juice. Toss gently to combine.
- Top with Feta: Generously crumble feta over the warm smashed potatoes, letting it blend into the mix.
- Bake or Fry (Optional): For added crispiness, transfer to a baking sheet and bake at 400°F for 15-20 minutes or sauté in a skillet for a crispy finish.
- Serve & Enjoy: Top with additional herbs and a drizzle of olive oil before serving warm.
