Description
Delightful ground chicken meatballs that kids adore and parents approve of, ready in just 30 minutes.
Ingredients
Scale
- 1 pound ground chicken
- ½ cup breadcrumbs
- 1 beaten egg
- ¼ cup grated Parmesan cheese
- 2 minced garlic cloves
- ¼ cup finely chopped onion
- 2 tablespoons chopped fresh basil or parsley
- Salt and pepper to taste
- 2 tablespoons olive oil (for cooking)
Instructions
- Prep the mixture: In a large bowl, combine the ground chicken, breadcrumbs, beaten egg, Parmesan, minced garlic, chopped onion, fresh herbs, and salt and pepper. Mix until well combined.
- Shape the meatballs: With slightly damp hands, roll the mixture into small balls, about 1 to 1.5 inches in diameter.
- Cook them up: Heat the olive oil in a skillet over medium heat. Add the meatballs and cook for 10-12 minutes, turning occasionally until golden brown and cooked through.
- Serve immediately: Let them rest for a couple of minutes before serving with marinara sauce or other dips.
- Optional toppings: Let your kids sprinkle extra Parmesan cheese or drizzle with favorite sauces.
Notes
For a healthier option, bake the meatballs at 400°F for about 20 minutes instead of frying.
