Description

A quick and flavorful ground turkey dish served over rice, perfect for busy weeknights.


Ingredients

  • 1 lb lean ground turkey
  • 2 cups long grain white rice (or brown rice/quinoa)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced (optional)
  • 8 oz cremini mushrooms, sliced
  • 1 teaspoon smoky paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Any additional vegetables (bell peppers, peas, etc.)
  • Olive oil for sautéing

Instructions

  1. Rinse the rice under cold water until water runs clear. Cook according to package instructions, typically in 2 cups of broth for every cup of rice.
  2. In a skillet, heat a drizzle of olive oil over medium heat. Add minced garlic (and onion, if using) and sauté until fragrant, about 1-2 minutes.
  3. Add the ground turkey and break it up with a spatula. Sprinkle in the spices and cook until turkey is no longer pink, about 7-10 minutes.
  4. Toss in sliced mushrooms and other vegetables, sauté for an additional 5-6 minutes until cooked.
  5. Combine with cooked rice in the skillet or serve on top of rice.
  6. Taste and adjust seasoning with salt, pepper, or herbs.
  7. Serve immediately, garnished with fresh herbs or a squeeze of lemon if desired.

Notes

Feel free to customize with your choice of veggies and spices. You can also add cheese or sour cream for added flavor.
