Description
A quick and flavorful ground turkey dish served over rice, perfect for busy weeknights.
Ingredients

- 1 lb lean ground turkey
- 2 cups long grain white rice (or brown rice/quinoa)
- 3 cloves fresh garlic, minced
- 1 medium onion, diced (optional)
- 8 oz cremini mushrooms, sliced
- 1 teaspoon smoky paprika
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- Any additional vegetables (bell peppers, peas, etc.)
- Olive oil for sautéing
Instructions
- Rinse the rice under cold water until water runs clear. Cook according to package instructions, typically in 2 cups of broth for every cup of rice.
- In a skillet, heat a drizzle of olive oil over medium heat. Add minced garlic (and onion, if using) and sauté until fragrant, about 1-2 minutes.
- Add the ground turkey and break it up with a spatula. Sprinkle in the spices and cook until turkey is no longer pink, about 7-10 minutes.
- Toss in sliced mushrooms and other vegetables, sauté for an additional 5-6 minutes until cooked.
- Combine with cooked rice in the skillet or serve on top of rice.
- Taste and adjust seasoning with salt, pepper, or herbs.
- Serve immediately, garnished with fresh herbs or a squeeze of lemon if desired.
Notes
Feel free to customize with your choice of veggies and spices. You can also add cheese or sour cream for added flavor.
