Description

Tender mushrooms marinated in olive oil, balsamic vinegar, and fresh herbs, making for a flavorful side dish or appetizer.


Ingredients

  • 1 lb white button mushrooms
  • 1 lb cremini mushrooms
  • 1/2 cup olive oil
  • 1/3 cup balsamic vinegar
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Clean the mushrooms with a damp cloth.
  2. In a bowl, combine olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper. Whisk together.
  3. Add the mushrooms to the bowl and toss gently in the marinade. Let sit for at least 30 minutes.
  4. Heat a sauté pan over medium heat. Add the marinated mushrooms along with a bit of the marinade. Cook for about 5-7 minutes, stirring occasionally.
  5. Before serving, toss in chopped herbs for added flavor.

Notes

Serve warm alongside grilled meats, over polenta, or on toast for a rustic starter. Can be stored in the refrigerator for up to 3 days.
