Tender mushrooms marinated in olive oil, balsamic vinegar, and fresh herbs, making for a flavorful side dish or appetizer.
Ingredients

- 1 lb white button mushrooms
- 1 lb cremini mushrooms
- 1/2 cup olive oil
- 1/3 cup balsamic vinegar
- 3 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Clean the mushrooms with a damp cloth.
- In a bowl, combine olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper. Whisk together.
- Add the mushrooms to the bowl and toss gently in the marinade. Let sit for at least 30 minutes.
- Heat a sauté pan over medium heat. Add the marinated mushrooms along with a bit of the marinade. Cook for about 5-7 minutes, stirring occasionally.
- Before serving, toss in chopped herbs for added flavor.
Notes
Serve warm alongside grilled meats, over polenta, or on toast for a rustic starter. Can be stored in the refrigerator for up to 3 days.
