Ingredients

  • 1 small head of green or purple cabbage, finely shredded
  • 1 cup fresh or dried cranberries
  • 2 medium Granny Smith or Fuji apples, cored and sliced
  • 1 cup grated carrots
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar or honey
  • 1 teaspoon celery seed

Instructions

  1. Finely shred the cabbage using a knife, box grater, or food processor.
  2. Grate the carrots and mix with the cabbage.
  3. Core and slice the apples; coat lightly with lemon juice.
  4. In a bowl, whisk together the mayonnaise, apple cider vinegar, sugar or honey, and celery seed.
  5. In a large bowl, combine the cabbage, carrots, apples, and cranberries; drizzle with dressing and mix until well coated.
  6. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  7. Taste and adjust the sweetness or tang as desired before serving.
