- 1 pound Brussels sprouts, halved

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots, then cut them into uniform pieces.
- Trim the ends of the Brussels sprouts and cut them in half.
- Toss the carrots and Brussels sprouts with olive oil, maple syrup, garlic, salt, and pepper.
- Line a baking sheet with parchment paper and spread the vegetables in a single layer.
- Roast for 25-30 minutes, tossing halfway through.
- Garnish with fresh herbs before serving, if desired.
