- 1 lb Carrots, sliced into ½-inch sticks
- 1 lb Brussels sprouts, halved
- ¼ cup Maple syrup
- 2 tbsp Olive oil
- 1 tsp Sea salt
- ½ tsp Black pepper
- Optional: Fresh rosemary or thyme
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the vegetables by rinsing and trimming the carrots and Brussels sprouts.
- Toss the vegetables with olive oil, maple syrup, salt, and pepper in a large mixing bowl.
- Spread the vegetables on a baking sheet lined with parchment paper.
- Roast for 20-25 minutes, flipping halfway for even cooking.
- Serve warm, optionally drizzling with more maple syrup and sprinkling fresh herbs.
