- 2 cups leafy greens (kale or spinach)
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 4 cups vegetable or chicken broth
- Fresh herbs (parsley, thyme, or cilantro)
- 2 tablespoons lemon juice or vinegar
- Olive oil for sautéing
Instructions
- Prep your ingredients: Dice your veggies into bite-sized pieces and mince your garlic and ginger.
- Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add minced garlic and ginger, allowing them to sizzle for about 1 minute.
- Add vegetables: Toss in carrots and celery first, stirring frequently for about 3-4 minutes until they begin to soften.
- Pour in the broth: Add enough broth to cover the vegetables and bring to a gentle boil, then reduce to a simmer.
- Incorporate greens and seasonings: After 15 minutes, add leafy greens and any other veggies. Season with salt, pepper, and herbs to taste, and simmer for an additional 5-10 minutes.
- Finish with acidity: Just before serving, add lemon juice or vinegar to brighten flavors.
